
In cold places, we rush to harvest all our tomatoes before the first hard freeze. A lot of that fruit never has a chance to ripen. What does a thrifty person do with so many green tomatoes?

Green Tomato Pie

Ingredients
- 5 Medium Green Tomatoes, peeled and chopped
- 2 TBSP Cider Vinegar
- 1/2 tsp Salt
- Zest of 1 Orange (optional)
- 1 and 1/2 Cups White Sugar
- 1/2 Cup All Purpose Flour
- 1/2 tsp Nutmeg
- 1 tsp Cinnamon
- 2 Portions of Pie Crust
Directions
Preheat your oven to 425 degrees and line a 9″ pie pan with your pie crust, then set aside.
Roll out your second portion of dough over a large cutting board and place it in the fridge until you are ready to cover your pie.
Peel tomatoes with a vegetable peeler the same way you would peel apples, chop them into bite sized pieces, and place them in a large bowl.
Next, add the vinegar, salt, and orange zest (if using). Toss the tomatoes to coat them.
Add the flour and sugar on top of the tomatoes. Sprinkle the nutmeg and cinnamon over the top of your other ingredients. Then, stir to coat the tomatoes and incorporate the spices.
Spoon your mixture into the prepared pie pan, making sure to scrape any flour or sugar coating the bottom of the mixing bowl into the pie plate.
Remove the cutting board from the fridge and use a sharp knife to cut the dough into strips. Place your strips delicately over the filled pie crust and weave them to create a lattice crust. Flute the edges decoratively.
Finally, bake your pie at 425 for 10 minutes. Then reduce the temperature to 350 and continue baking for 50 more minutes. When finished the crust should be golden and the tomatoes will have softened.

Ingredients
- 1 can black beans
- 3 medium green tomatoes, diced
- 1 large bell pepper, diced
- 1/2 medium onion, diced *
- 1/2 bunch cilantro, chopped
- 2 Tblsp lime juice
- 1 Tbsp red wine vinegar
- 1 Tbsp sugar
- 1 tsp ground coriander
- 1 tsp salt
- 1/4 tsp ground black pepper
Directions
Dice and combine all ingredients in a medium bowl. Chill in the fridge for 10 minutes and up to 1 day. Serve with tortilla chips or on tacos.
*Any type of onion can be used. Purple onion lends a spicier flavor while sweet onions produce a milder salsa.
